MIX: Mix a small batch of the PMF Brownie Mix according to bag directions.
Makeup:Batter: Place in a full sheet pan with extenders. Spread batter evenly.
BAKE:1- Bake at 350F in a convection oven for approximately 25 minutes.
2-Brownies are done when the internal temperature reaches 210F. Do not overbake.
FINISH:
Let the brownies cool completely
Place a few drops of Leaf Green Gel in a bowl together with the cream cheese filling and a few drops of Leaf Green gel color. Pipe on top of the brownie
Sprinkle chocolate shavings on top of icing

SCALE & MIX: Scale and mix the donut mix according to the instructions on the bag for a small batch. Use your scale to weigh all the ingredients, including the water.
Makeup: Add 1 to 1.5 ounces of peppermint emulsion flavor and 30 drops of green food coloring or until the desired color is achieved into your cake batter mix. Directions
DONUTS:
Place the water in the bowl then add the dry mix. Using a paddle, mix for 30 seconds at low speed to incorporate ingredients.
Scrape the bowl well then continue mixing for 2 minutes at medium speed (medium speed is 3rd speed on a 4-speed machine).
The batter temperature should be 72° after mixing.
Rest for 5 minutes (if room temperature is very cool, rest for 10 minutes).
Fry at 375°F for 55 seconds on each side.
For best results, apply glaze to a warm donut (1 minute after frying
CRUMB TOPPING:
Melt the butter in a small pot, over low heat.
Stir in the brown sugar, cinnamon, and salt.
Add the flour, and continue to cook over low heat, stirring occasionally, for 5 minutes.
Remove from the heat to cool, and set aside.
ASSEMBLY:
Glaze warm donut.
Drizzle spiced streusel crumbs when the glaze is semi-dry.
*You can add powdered sugar on top of the crumb topping.

MIX: Mix the batter following the directions provided on the bag of T PMF Tres Leches Cake Mix twice the small batch.
Makeup: Scale and deposit 6 ½ LB of batter into paper-lined baking trays with a lightly greased pan extender.
BAKE: Bake at 325-350°F for 33-38 minutes or until internal temperature reaches 205°F. Let the cake completely cool down before placing it in the freezer overnight.
FINISH:
Remove cake sheets from the freezer. Cut them in 4. Slice each quarter sheet in half horizontally. Place the bottom half of each ¼ sheet cake on a Cake Pad Quarter Sheet. Starting with this bottom half, pipe a border of whipped-up PMF Pastry Topping Whipped along the edges of the top.
Slowly pour 13 oz. Alegria evenly inside the border of the cake and let it soak in.
Spread a thin layer of PMF Pastry Topping Whipped on the top of the soaked bottom half. Garnish with sliced fresh strawberries.
Place the top layer of the cake over the bottom layer and press down gently. Pipe a border of whipped-up PMF Pastry Topping Whipped along the edges of the cake top. Repeat the pouring process. After the 13 oz. Alegria has soaked in, ice the entire cake with the PMF Pastry Topping Whipped.
Coat the bottom edge of the cake with chocolate cake crumbs. Use some PMF Pastry Topping Whipped to pipe a shell border along the bottom and the top edges of the cake.
Garnish the top with fruits coated with PMF Mirror Neutral or dipped in melted PMF Dark Chocolate Coating. You can also drizzle melted PMF Dark Chocolate Coating on the top of the cake..

What is Napoleons?
Napoleons, often referred to as Mille-Feuille in French, are a delectable and iconic pastry that has captured the hearts and palates of pastry enthusiasts around the world. MIX: Use PMF Whipped Topping to prepare some PMF Instant Vanilla Custard Cream according (Patisserie Cream) to the instructions on the bag for a small batch.
(Optional: for thinner layers place the puff pastry sheets between two sheet pans for the first 10 minutes of baking. Make sure to place baking paper under and on top of the puff pastry. Remove the upper pans for the final 10 minutes of baking time.)
Makeup:
Place half of the vanilla custard on top of one of the cooled puff pastry sheets. Top with a second puff pastry sheet. Place the remaining custard on top and then place the last sheet, bottom side up, over the custard filling.
Using a sheet pan, press down firmly on the assembled Napoleon without breaking any of the puff pastry sheets.
Place in the freezer overnight.
FINISH:
Remove the assembled Napoleon from the freezer. Coat the top puff pastry sheet with PMF Vanilla Dipping Icing heated to 105-110°F.
Before the icing starts forming a thin skin pipe parallel lines of PMF Chocolate Dipping Icing are heated to 105-110°F the length of the Napoleon.
Draw a sharp knife through the chocolate to create a pattern.
Trim the rough edges of the Napoleon. Cut into 3 strips lengthwise. Cut each strip into pieces 1 ½” wide each.

SCALE AND MIX:
Mix 18 LB unbleached pastry flour (at 60°F) and 8 oz. milk powder for 2 minutes on low speed. Gradually add 9 LB All Purpose Palm Shortening (at 55-60°F) and cut in small pieces until the mixture forms and crumbles the size of small peas.
Dissolve 8 oz. sugar and 4 oz. salt into 8 LB ice cold water (make sure water does not contain any ice chips). Use your scale to weigh all of your ingredients, including the liquids.
Slowly add salted water to the mixture. Mix only until water is absorbed. Do not over-mix. The mixture should not be a paste. Place pie dough on pan and place in cooler for at least 6 hours or in freezer if storing longer.
Prepare Streusel by combining 4 LB PMF Cake and 1 LB butter or margarine on low speed. Mix until the mixture forms small peas
Makeup: Remove dough from the cooler and let it sit until it reaches room temperature. Roll out dough ¼” thick.
Mini Blueberry Pies: Cut an equal amount of 3” and 4” circles from the rolled-out dough. Press the 4” circles into the bottom of a 3” pie tin. Fill the pie tin shell with 4 oz. PMF Blueberry Filling. Brush the rim with egg wash. Cut a hole in the middle of the 3” circle and place that circle on top of the filled pie shell. Egg wash and sprinkle with crystal sugar.
Mini Apple Streusel Pies: Cut 4” circles from the rolled-out dough. Press the 4” circles into the bottom of a 3” pie tin. Fill the pie tin shell with 4 oz. PMF Apple Pastry Filling. Coat the edges with streusel (see above)
BAKE: Bake at 400°F in a convection oven for approx. 15-18 minutes

SCALE AND MIX: Mix the dough following the directions provided on the bag of PMF Cinnamon Roll Mix for a small batch. Use your thermometer to achieve a finished dough temperature of 80°F. Bundle and let the dough rest for 45 minutes.
CINNAMON FILLING
Blend together the following ingredients on low speed until the mixture forms small crumbles.
4 LB PMF Cake Mix
12 oz. Butter or margarine
1 LB Brown sugar
1 oz. Ground Cinnamon
Makeup:
Sheet the dough ¼” thick by 18″ wide. Brush lightly with water. Sprinkle on the cinnamon filling mixture (see recipe above). Roll the dough into logs. Cut them into 2 oz. pieces.
In a full-sheet baking pan, smear a layer of PMF Caramel Glaze about 1/8” thick. Use a pan extender if you have one. Cover the glaze with diced pecans. Place 35 cut pieces of dough on top of the pecans.
PROOF AND BAKE:
Proof for approx. 30 minutes until ¾ of final size in a proof box set to 100°F/80%.
Bake at 335-365°F or until light golden brown. Immediately upon removing from the oven carefully turn the pan upside down and away from you. Leave the pan on for approx. 1 minute until all the glaze drips on the buns. Remember that the glazed side will form the top of the rolls. Remove the pan with care.
Note: The rolls may take longer to bake because the glaze will insulate the rolls from the heat and they won’t brown as quickly.
FINISH: After the cinnamon rolls have cooled, finish by brushing with Honey Pectin Glaze.
